At harvest time the fruits are collected by hand. After juicing, the seeds are dried and cold-pressed for the oil - it takes around 100 pomegranates to produce 1kg of seed and it takes around 7kg of seed to produce 1kg of oil. Pomegranate seed oil has a beautiful golden clarity and a pleasing, nutty scent.
